Avec55 è un luogo moderno e informale. La piccola cucina (una sorta di laboratorio da alchimista) si affaccia sulla sala, divisa da un bancone bianco che ricorda lo stile dei ristoranti del Sol Levante e al quale ci si può accomodare per godersi un bicchiere di vino o anche per cenare. Raoul si muove con maestria nel suo regno. Nonostante sia sempre in cucina, un occhio è sempre alla sala. Cura nel dettaglio la selezione delle materie prime ed è molto attento alle impressioni della sua clientela. Il menu, profondamente legato alle eccellenze del territorio laziale, cambia costantemente in perfetta sinergia con la stagionalità dei prodotti e con il pescato giornaliero. Avec55 è un laboratorio dove la libertà di creare diventa un linguaggio e uno stimolo per evolversi.
The Atmosphere
Avec55 is a modern and informal place. The small kitchen (a sort of alchemist’s laboratory) overlooks the restaurant hall that is divided by a white counter that recalls the style of oriental restaurants and where you can sit and enjoy a glass of wine or have dinner. Raul moves masterfully in his kingdom. Although he’s in the kitchen, one eye is always on the dining room. He personally selects the ingredients and takes care of the impressions of his customers. The menu, deeply linked to the excellence of the region, changes constantly in perfect synergy with the seasonality of the products and with the availability of fresh fish. Avec55 is a laboratory where the freedom to create becomes language and stimulus to evolve.
